    I find that comparable kits ( roughly the same volume and $'s ) are similar in quality. I look at Special Editions and pick what looks interesting without favoriting a company. However I have been really happy with the Eclipse kits.

    The kit probably is good for sometime after expiry. However I didn't watch expiry and had a white with a off taste. I ended up dumping it. Hopefully that won't happen to you. I'd chance it.

    My Eclipse Zin is now 18 months old. It is our favorite wine. It was good from the start (after 5 months) bulk ageing and has never had any bitter taste. I have 3 other Eclipse kits bottled and 2 in carboys but the Vin is unique.

    Time in a bottle makes a big difference.

    I have been making wine since 2001. My advice is to make some mid priced (10 litre) kits and top end kits. The mid priced kits will mature quicker and hopefully allow you to actually age the top end kits. Once you have a good supply you can plan ahead and stick with the best kits.

    I top up with a good Bordeaux type wine e. g. Merlot, Cab or I did use Petite Verdot. That way you are not diluting and don't give access to air.
