I took a chance and I am running it now, tweaked it with whatever I had on hand : a cup of dried prunes, some supermaket fresh grapes, 1 Tbs of tannins, 2 11oz cans of frozen blackberry Welch concentrate to boost SG which was kind of weak at 1.080 with all those additions in reduced total volume (5Gal), perhaps I will oak it in secondary. Juice smelled good 1 year after expiry, color almost black.
Having fun with it and it is fermenting like crazy, I have a good vibes about it.
