    Drink in Good Health

We're golden here, along with Feast of the Seven Fishes. Italians who drink wine, eat cheese, have lamb as much as possible. Have a garlic stuffed roast leg of lamb planned for a few days from now.

    Suggestions for Frozen Skins...?

I got @manshipfred's Petit Verdot and Tannat skins this fall. I added to cheap commercial apple cider from Wegmans, and made a second wine. Both are experiments, but turning out terrific so far. The apple cider has no winemaking/hard cider tannins at all. It's pretty blah as cider, but with the...

    Clearing wine

There’s an ignore button? I missed this, and could use it.

    Secondary fermenter

Plastic is ok, as long as size is appropriate and headspace minimized in both containers. When I rack, I tend to start with reserved 'extra' and then go for the main carboy, just so both are mixed. Once both are off lees, there is always a smaller 'extra' bottle. Some here are making larger...

    Exploding wine bottles

It's fine as wine, just a bit more alcohol than you may have expected initially. If this had happened in the correct bottles, you'd have a sparkling wine. Wait a while in the carboy until the wine has settled down and cleared. If you want anything sweeter than what you have, add NEWLY PURCHASED...

    Exploding wine bottles

Are the bottles actually cracking, or is this a matter of the wine being carbonated? You didn't come back to the other threads you started- don't know if you really had complete degassing and stability before bottling. If it's carbonation, chill the bottles as CoteRotie said. If they are...

    Yeast Nutrient Too Early

In other words, don't stress. So many posts here are stressed people, and the ferment will be fine.

    Yeast Nutrient Too Early

Not a problem, really. I put my nutrient in at the same time as yeast, some others wait a few days, others use staggered additions. What you end up with after a few kits or on grapes is what works for you, or is required by timing.

So HILARIOUS on SO MANY levels!!!!

Jaysus. I don't know what I am doing with 90 gallons from the last two years, but damn.

    Hard Cider back sweetening

I made a guess based on FermCalc and what I know from doing this myself. I don't know apple cider/juice sugar percentage, but it won't be wine high. Mine has always been 1.06 or less either for commericially available or cider-specific, as others have said. Cotes de Blanc can go higher than 14%...

    Mature vine transplant

I think those are dates on the tags, 1999. So 20 years on the vines, which would be a shame to waste on ripping them out. Glad you are going to work on saving some.

    What R you doing today?

It was a little gross with sleet over the snow, but it still made the dog happy for a bit. We will still have it for a few days, we are just an hour north, but colder.

    Hard Cider back sweetening

Did you add sorbate when backsweetening? If you didn't , and just added juice/sugar to a ferment with yeast still in it- you just upped the ABV. Without knowing the SG of the juice, I can't run through FermCalc to see what ABV you should now have, but I assume it is around 10%. I would be...

    Oak and Back Sweetening

If lysozyme was used post-mlf, would sorbate be an issue?

    Protein haze in red wine

Huh. I wonder about that, I know people who use diatomaceous earth frequently, including adding to livestock feed. Are Canadians getting more cautious, or is it only for winemakers? Most of the mail order places still have it in stock, I guess selling through. I see chitosan and keiselsol for...

Pinot Noir Fastferment for 1st Time

I know you did not take an initial SG, but you haven't said what yeast initially and what you used to try the restart? Are they just not able to handle the amount of sugar in the juice?

    Protein haze in red wine

You can indeed buy chitosan and keiselsol separately in quart or liter bottles at any of the usual homebrew shops, and amazon. Not my local in-person, they never have anything LDCarlson doesn't package/wholesale. For what it's worth, I found 'chitosan liter' had many results on Google just now...

You don't have a McGyver forum so ...

Love this! I've though of getting a cheap pump and asked what Rice_Guy uses. I need to wait for Xmas to see if I get an AIO, but want to transfer and filter. Cheaper is great, and I already need to figure out switch and power for a spinner. How did you connect wall wort and switch?

    Novatwist...I love them

I swear I saw ScottLabs showed the Novatwist yesterday, but today can't find them. I think I found $0.35 before shipping on 1000. I haven't checked Waterloo Container, I really don't need that many, still working through my corks.
