    Thank you for sharing! Good info. I’m of a more natural process mind-set. I have a few no chemical wines aging nicely at 15 years. (And, my grandparent’s homemade Grape wine from 1967- very potent and drinkable:)

    Writing, Gardening, foraging, preserving, fermenting, chicken keeping, fishing, Claw hammer Banjo, floor loom Weaver, wood carving, volunteering and supporting non-profit arts organizations. I collect a lot of things, but my Coffee pot collection is quite extensive:} I have too many hobbies!!

    What's a good process for bringing our plum wine to taste?

    With a light fruit wine, I choose a yeast that won’t take the alcohol too high, and will ferment a bit slower. Fresh lemon juice worked ok for my Plum wine. I added some raisins, too. Another batch I made with different yeast (the 1116? ) and it had less flavor and was drier than I prefer...

    Cross contamination. Darn good Kombucha

    Pretty sure I grabbed the plastic screen funnel and used it to bottled Kombucha. I rinsed it and dipped it quickly- it was a primary juice straining so I wasn’t as cautious.. and I totally forgot about kombucha contamination. Guess I need to keep things separated.? Time to buy more strainers…

    Thank you! I’ve never followed a recipe in my entire life!😜 I use them as guidelines.. I’m kind of an intuitive cook. Sometimes with good results, sometimes not.. but rarely the same! That doesn’t always work with chemistry. But, Wine seems to be more forgiving than baking?! 🤣😂
