    How long are we talking from the crush to adding the sugar and yeast? Was it immediate? I have never had that happen to me the few times I have used Muscadines. Maybe Waldo can jump in here. He has made a lot of Muscadine wines. I rarely use them. I love the fruit but don't care much for the wines.

    If you use the cleaning chemical in combo with the sanitizing product I don't see why it wouldn't work. I haven't broke down what the cost per gallon made of Star San is but will say that is no where as near hard on the skin as K-Meta.

    That's how I do it as well. Works every time. Just don't beat the snot out of it when you stir to minimize oxidation. Just a short gentle stir.

    I try to transfer around 1.020 as well. I like to wait till the rolling fermentation is over so I can fill the carboy to the neck and not worry about it getting up in the airlock or blowing it out.
