    First gallon of elderberry juice us steamed. I pulled 1/2 gallon aside so my 8 y/o daughter and I can make some jelly later today.... she loves elderberry jelly... might have to get some more jars and whip up a batch uf muscadine as well.

    Given that the high after Wednesday is in the upper 30's and lows in the upper 20's I figured it was a good time to rack the PA juices to cold stabilization. I'll leave them out ther til the end if January then move the Muscadine out in their place... still need to carry the Fredonia over and...

    Seven gallons of 100% elderberry juice sitting in the fermenter. Still have about 55 lbs of berries to steam tomorrow. Shooting for right around 6 lbs per gallon. I have 28 lbs of skins from today that will be combined with tomorrows skins to make a 7 gallon 2nds batch...

    Truly stainless. The induction cooktop requires at least a small amount of metalic metal in order to trigger the on switch. (metallic metal should be magnetic...my bad)

    Did the dishes, straightened up the house somewhat for Christmas and ran to Kavic Winery for a couple of bottles of wine to have with Christmas lunch at my Sister in Law's house. Always enjoy talking with Dr. Kavic and his wife. Great people. Glad we were neighbors and still friends..

    Having issues on my whites. All of them.

    I've had the same issues with Luva Bella whites, just an off aroma. I know most of their whites have also been very low in acid. Quit buying whites from them 2 years ago. I've had wine from other wine makers who asked about the odor and the first question I asked was where they got it.

    Another shout out for Lafitte. Pick up the phone call Mike, corks are shipped, bill is either in the box of comes a few days later in the mail. Shipping has been $68 both times I ordered. I'll be ordering again in the spring. May even splurge for the custom corks this time...
