    Bramble multiply like crazy and you'll have a boatload in no time. Last year I harvested 6.6 lbs of black raspberries and made an absolutely delicious wine. This year my haul was 30.2 lbs! VERY happy!

    No. Yeast can't read. It may stop at 12% or it may stop at 16%. A few days of no SG change is a better indicator with a number closer to .990 being more likely. First post! Welcome to the forum. I'll be starting a blackberry myself once I'm done harvesting.

    Beautiful! Today was my 6th day in a row of 3 lbs of wild blackberries. Never had a harvest like this! And my thornless are just getting warmed up and they are gigantic.

    Yeah, what is it with blackberries this year? I have a huge crop, too, and the berries have never been this big. And not EXTREMELY tart acid bombs like some years. Looking at my first no water blackberry wine. So many berries, I may even do jam!

    The slimy from the Rose of Sharon made my wine more viscous but it wasn't unpleasant. I liked the wine and will make it again some day. I think okra has more of that mucous-like stuff. If I had good tasting okra available I'd try wine.

    Me too! Very first wine was raspberry from the garden, already had enough jam. Very tasty following a recipe with 3.5 lbs fruit. Live and learn - delicious with 6+ lbs fruit!

    Welcome to WMT! That sliminess of the okra would probably affect mouthfeel. With my Rose of Sharon, also "slimy", you'd think I added a healthy dose of glycerine.

    My two cents... Sugar and salt will never ever go bad. Stock up when prices are good. I have a 6-gallon bucket of sugar for wine making that gets topped off whenever it gets half empty. I also have 3 6-gallon with gamma lids filled that don't get touched. For emergencies.😄
