    Massive Rhubarb Plant

You have it under airlock now, and a good amount of lees. I would wait until your ph meter comes in, or next week when you're ready to rack it. Then put some into the sg tube, test the sg, test the ph and rack it into a clean, sanitized carboy. Depending on the ph - you may want to make some...

    Rosella/Roselle wine first attempt

How long has it been in there? About a week? Sorry - Been busy - lost track. If it's down to 1.030 - you could pull the bag out anytime and let it drip or gently squeeze it. Keep stirring it and monitoring the sg.

    I need wine bottles!

And as a bonus - you get to sample whatever is left over in the bottle! AND - you can find a FREE paper bag to conceal it! LOL I just ask my friends ........ many of whom drink more than they should. But it IS Wisconsin! HA!

    Corking screw-top bottles

I have bottled in screw tops - I use #8 corks and a 2-handed corker. Use a double handled corkscrew to remove the cork. Never had a chip, break or crack. I bottle a few for myself that way every batch ........... and I get warned about it every time I post a pic. LOL However - that...

    Dandelion Wine

I can pick a FULL gallon bag in about 30 minutes. It takes about and hour to "de-petal" them. You end up with about 5 cups of packed petals.

    Dandelion Wine

Actually - some of the green petals are just fine. I ate every part of the flower just to see where the bitter parts were. The bitterness comes from the while "milk" which is below the flower head. Everything above the drooping lower petals is fine & has no bitter taste...

    ''natural'' wine, as a test?

I believe it takes from 3-5 years for most grapes to begin producing. Mine really started kicking out grapes about year 10. Which is why I have no intention of planting another one now. LOL I got 5 gal of juice from my one grape vine last year. Good luck!

    ''natural'' wine, as a test?

Just my own thoughts - but if you have a small local winery close by - or maybe a hobbyist - why not talk to him/her ? Maybe you could take some grapes to him & would he make a small batch? You'd have a better chance at seeing the true potential of your grapes that way. He can test the...

+1 on the nutrient added now. Yes - 40C (104 F) is the correct temp to get the yeast out of hibernation. Add the low temp last night and you will likely have a slow start. I often use a seedling flat warmer under the fermenter when I start wine in the cold months. Keeps the must in the 70 F...

Yeah - this time delay factor is an issue. You need to be getting up a lot earlier to make your posts, Shayne. LOL
