If you had to go with a single varietal...

What timing! My neighbor said was cutting to just one white and one red and that was all she was ever going to make...just those two. I said never! That is what is great about wine making,,,all the different kinds! And then the blends!

    Bottling session #2

JohnT....as a veteran sausage maker, once you break the 75 pound batch line, it often goes from great time had by all to The Polish Sausage Death March of 2016. I did six cases a few weeks back by myself and it quickly changed from happy hobby to real work! But, I have never had 14 helpers...

    Small single serving bottles?

I tried vinegar and it worked....short soak also took a long scrub. Pool acid, you simply wipe off the lettering with a rag. I do let they sit overnight of several day simply because it is about 110 degrees out in the shop this summer! I clean 5-6 and set up 5-6 more to soak. I'd rather be...

    Small single serving bottles?

Doing the same thing with clear glass Corona beer bottles. Fill the bottles with water, stand up in a bucket of muratic swimming pool acid, soak overnight, and wipe off the lettering and you have a nice clear single serve bottle for your Dragon Blood or Island Mist wines. I just wanted to be...

    Temperature Control System

Since I mainly do kits and I have a temp controlled chamber to use....I use it. I ferment on the cool end of the spectrum and just extend the time lines as required. Frankly, I tend to sit em and forget em for a few weeks. after a few weeks, I stir them up and raise the temp up 6-8 degrees for a...

    Apple Wine Q

wildhair....I have no experience with what you suggest. However, I can find no fault with it either. I suspect after freezing you may not even need to grind before you press....they are going to be pretty mushy. Try it and see.

    Other Tweeking Cheap Kits

Joe says and my experience bears it out....added at primary you get more of a background note. Added in secondary, you get a more forward taste. I cut the volume to 5 gallon on one of my white kits....and it did add body....but a heavy bodied Chardonnay is not always a good thing...it kinda lost...

    Cold crashing

so the part you modded....that just extends the height? I'm not understanding what is happening there. I almost bought an OLD 6 door reach in cooler last week end...was almost 20' long. I was getting caught up in my usual action fever and going for it...my buddy grabbed me said Look around, how...

Hi all, aspiring mead maker here!

BEE HIVES...start now, it takes lots of honey to make lots of mead. If you have your hives, you have more control of your basic raw material. The hives could also turn out to be a good "side line business" leased to gardeners, farmers, fruit orchards. JerriCurl here on this site prodded me into...

    Other Tweeking Cheap Kits

I added the zest while bulk aging. Think Joe said the zest of half a grapefruit....that just looked like such a tiny amount and the carboy looked for big....I used the zest from the WHOLE grapefruit. Joe was right...half would have been plenty. Powerful stuff. Next time I tried it I used half...

    Flyboard Air!

I suspect there is a very steep learning curve...like straight up and down! I just don't heal up as fast as I used too! Oddly enough when I saw this, I thought back to a dolphin encounter ten years ago. as you floated in the water, the dolphin would swim under you and put it's head on the...

    Temperature Control System

Ink Bird controller and a small chest freezer with a little heater cube for winter use....sit up outside in my shop. I learned zip about programing micro controllers but the system holds withing one degree of set point and works great for beers and wines.

What is "layered" on top of my wine?

I think you are just looking at light....it is lighter at the top because the light is moving through less wine....darker as you go deeper because the light has more wine to go through.

    WineXpert Mezza Luna Red questions

There's your problem! I tweak the snot out of this kit....have never made it straight up by the instructions. In fact, I have only NOT TWEAKED the 3 Eclipse kits I just bottled....everything else has been tweaked to my hearts content with a lot of inspiration from joeswines.

    WineXpert Mezza Luna Red questions

Ditto...we had a bottle the other night, about ten months old. I was like DANG that is GOOOOOD! Slap your Momma good. Still have a case stashed. Need to start another one. Good pretty early on too...not bad at 3 months.

Be careful what you wish for

I know a good lawyer. About every five years he quits and goes back to laying tile....he says just to get the taste out of his mouth! He has only written a few strongly worded letters for me, but I understand his tile work is outstanding. He is also pretty handy with diesel motors. I don't can...

    Unbalanced Finished Wine

2 months? I'm trying to get two years! We had a year old bottle the other night and we both just going WOW! WOW! Bigger bolder and smoother too. I have a case stashed and it is going to be hard to wait another year now that we know how much it has improved.

    I'm so excited!

This week end I moved some bottles into the rack and in so doing I emptied out a cardboard wine bottle box....I was so freaking happy!! I could box up another case of wine.....AND HUNT FOR A PLACE TO PUT IT! We really like our small house...but we really need a big cellar for wine, veggie...
