It was good simple and pretty quick. I lost that recipe! one of the few recipes I actually followed. Always amazed me how...

Ours is a #32 grinder adapted to a gear reduction drive motor. It will coarse grind 150# of meat in about 45 minutes...it is a beast! Same motor drives a Cableas meat mixer we adapted....that is SO NICE! My hands used to ache for days after mixing 150# of ice cold meat....and it it gets...

    Best Charcuterie Resources for Beginners?

my brother makes excellent small batches of sausage on his kitchenaid mixer...he likes mixing fruits with his sausage...like pork with peach and apple...uses odd meats like goat, rabbit, fish. He does some stuff I would never do, but he always seems to pull it off. He is big on steaming his...

    Best Charcuterie Resources for Beginners?

Pink Powder is the curing salts and it is indeed very salty tasting. I like to mix all my spices in wine and then add to the meat....and I have to batches because my motorized mixer only does 15# at a time. So I mix all the spices stir very well, and batch out the wine spice mix per number of...

Do you have a middle child?

I am a middle child who grew up with just my father. Good Dad, but he treated my brother and I very differently. Growing up we all knew that too.... just the way it was. Always kind of bugged me. When I came home from the Army, I asked Dad about it. He said he knew he had treated us...

we have one of those Skol grills....like a propane Webber...dome top lid. I asked my brother to light it up. Cooling unit for small wine cellar

I would think if your basement stays 68-69 degrees and you don't mind if it gets a little bit warmer....a regular old through the wall mounted/window air condition would work just fine. Bet you could hook it up to a 40 dollar InkBird controller to get it to cool down to mid-fifties. Small cube...

    Do you loan equipment out?

Dad loans tools out all the time....you give him a check for the brand new replacement costs, he will loan you a tool. You don't bring it back, he cashes the check. You break it, he cashes the check. Check bounces, he will take you to small claims court. It is a game he likes to play. Got a...

Wine Kits to Avoid Like the Boogie Man

I do not doubt your experience at all Cat, but we had the exact opposite experience. Our WE Trinity Red was really nice. That said, I had read Joe's Tweaking Kits huge thread before I ever made a kit! Mine was tweaked...added tannins, oak in secondary, and bumped up ABV....so in fact, I doubt it...
