    tannin and red wine aging

    What about using a super strong black tea to add tanin? I brew the tea, lots of it, in 1 liter of water for at least 30min and then reduce the volume by half through simmering and use that.

    Thanks for the welcome. That, durian wine, has been on my mind but I have shied away from it as I am very doubtful it would turn out ok. I love the fruit though. Let me try the cashew apple wine and I will have a shot at durian wine :)

    Thank you, I used to get my tanin but adding a super strong liter of black tea but I think cashew apples are dry enough in the taste to not need it. However I am tempted to still add the 1 liter of fresh orange juice to boost the acidity.

    Yeah I was very doubtful about banana wine until I made a batch, and it is surprise. I was told to try cashew apples as they make a very good wine so lets see.

    Glad to be in this esteemed group. Is anyone else making wine from tropical fruits? I have made pineapple and banana wine and i am now about to delve into Cashew Apple wine. Has anyone done this ?
