    Awesome, thanks for the info on this! Did you try any second runs with the grape skins? I was thinking of getting a cheaper Chilean Malbec kit from Midwest and either using all six gallons on the cabernet skins or dividing it and using 3 and 3 on each of the skins.

    Citric acid may have something to do with it. I believe it converts to acetic acid (vinegar) during MLF. I'm like you though, still trying to figure things out. :h

    The screws are #10 x 5/8" stainless but the straps are aluminum. I couldn't find stainless and hopefully someone doesn't tell me that aluminum will react with the acids in wine. Aluminum is supposed to be resistant to corrosion? If I find out the aluminum won't hold up, it wouldn't take too...

    Hi Guys - Looking at starting my first must wine with a couple of frozen musts from Wine Grapes Direct, a Cabernet and a Merlot. They each have a Brix of 24 and pH at 3.7 - 3.8 with a TA of 0.55. Would you add anything to get the TA up a little? Thanks!

    Can I stop and prevent malolactic fermentation?

    I've read that it can have that affect if added prior to MLF but it also does if added after? Don't think I'll have any intention of ever sweetening a red but just for knowledge sake. Thanks!

    Cranberry Wine and MLF

    Racked the cranberry off of the lees this weekend and its still slowly bubbling in the carboy. SG was at 1.000, pH was at 3.36, and TA was at 0.71. I don't think I'm going to try an MLF so I'll let it finish and see how it mellows out as it ages. Thanks for the help!

    I added a 1/4 tsp to 6 gallons must prior to starting fermentation on Saturday. I can check that tonight as well. Picked up the SC 300 over xmas break and have played with it a little bit. I'll post all of the results tomorrow. Thanks for the help!
