    I just checked my measurements. I was using ~6 grams of DAP at inoculation and ~3 more grams on the 3rd day.

    Use oxyclean for the cleaner. Just make sure you get the one that's unscented and no bleach. Oxyclean is alkaline, so when you follow up with starsan, you really annihilate the germs. Not one single issue in over 15 years. (knock wood)

    In my experience, it's going to keep slowing down. If you want 1.010... you might get there, but you might have to be really patient. EC 1118 is well known for fermenting for MONTHS after a wine is in a bottle. It's the terminator of yeast.

    I don't have a problem with the grape pack being included... but that's not what started this discussion IIRC. People are adding 7L of water to a WE Eclipse kit to make it to 6 gallons in primary. If it says 18L and you actually get 16L, that's messed up. I just weighed an RJS WS Rosso Grande...

    Those bottle caps can become projectiles... people have been seriously injured by champagne corks. I've heard of the bottle caps from Belgium beer (highly carbonated) getting embedded in sheet rock ceilings. There's a reason champagne corks have wire baskets plus heavy foil over them.
