    For me, Mezza Luna Red finished at 0.998 (barely dry). Most of my wines end up at 0.994 or lower at bottling. That slight residual sweetness appeals to some people.

    I never add more nutrient to a fermentation after the start. Actually I rarely add more DAP after the start, unless it's going to be a 15%+ ABV (especially ports). Then I try to catch it before it hits 1.030.

    You're comparing a fairly low quality kit (Mezza Luna) to a high end kit (Stags Leap Merlot). The price difference is $70 versus $170. IMO, I buy the highest quality kits I can. Your time (plus the aging time) are your biggest investments BY FAR.

    Some of those pesky buggers will live a looooooong time. All it takes is a few. I've heard of bottle bombs that started bursting 4 months later. I agree... add the chems now and you'll probably be fine. Rack before you stabilize if you see yeast sediment in the fermenter.
