    Natural flavors for blueberry wine

Brewers best had flavor extracts, and all of them were so bad, artificial, fake flavoring, that would absolutely ruin anything they were added to. They now have a line of natural extracts, so I bought a few to try. My advice is save your money and buy additional fruit so that you can end up with...

    Ideas for my wineyard?

I have absolutely no knowledge whatsoever about growing grapes, I make mostly fruit wines. My Oldest absolutely loves dry reds, so the Marquette looks interesting to me. Maybe two 90 ft. rows of grapes one red, and one white, and then some other fruit that doesn't take much space. Decisions...

    Ideas for my wineyard?

Hi everyone! I've got a dilemma, this last year the home next was destroyed by fire, the owner collected on insurance and had the house removed and the lot leveled. So He contacted me and asked if I'd be interested in buying the lot. What could I say? Heck Yeah! So I've got an empty lot 60' x...

    Apple Shredder

Dan, I got really tired of cutting up the apples, I even tried using one of those hand held apple corer/cutters, way too time consuming, and then I remembered I had a french fry cutter; WOW! way too easy now. I'd have frozen them first but all of my freezers are full of that good Nebraska Angus...

    Jim's foray into gluten-free brewing

Jim, i'm not sure what your kit calls for length of boil, but more of my fuller flavored beers I do an extended boil for an hour or as long as an hour and a half. The longer boils caramelizes the sugars in the wort and adds a little more flavor and color. I think you're on the right track using...

    Apple Shredder

Greg, I've been using a garbage disposal for about eight years, and every year I run about ten bushels of apples and pears through it, the stems and seeds have never caused a problem if you press right away, they don't really get chopped up that much. I like you, didn't like having to cut up the...

    Found some pie cherries

Arne, my wife found a few pounds of pie cherries this last fall, it wasn't enough for a batch of wine, so I used it in a skeeter pee, it was wonderful! Notice I said WAS. Dale.

    1 gallon kmeta dosage

I don't do small batches but if I did, I would take a small bottle measure in 5 tsp. of water and mix in 1/4 tsp. meta. Put one tsp. of meta water mix in each gallon of wine. Dale.

I am so in on this, I've been drooling over these pumps for quite a while, but have never had the extra cash to go for one. Those carboys are getting heavier every year. Dale.

    Aronia (Chokeberry) Wine

Greg, I was going to do a little bench testing after a year in carboy, and just see what works well for me. I'm thinking some more lemon,I used lemon juice in 5 gals. for the acid, and it's definitely better that the other batch. I'm also thinking maybe I'll try a little concord, and see what...

    Aronia (Chokeberry) Wine

I was just going to post on aronia wine, as I just racked ten gallons tonight. About all I can say about it is, it has a very earthy aroma and flavor to it (dirt). I have never made it before, but a friend gave me 40 pounds of berries, and I thought what the hay. My question for anyone is, does...

    Don't give up too soon

I feel the same way about choke cherry, I think it doesn't start coming around until at least 1 1/2 years, or more.

    Elderberry syrup ?

Since it's runny, use it on pancakes. I used to make a lot of elderberry jelly, and when it didn't set well, I just called it elderberry syrup. Dale.:r

    DangerDave's Dragon Blood Wine

cmason, you've got that right! this fall was the first time I've ever had to pour out wine. I started with several buckets of winter pears, ground and pressed them into juice and started the fermentation. I came home from work the next day to find billowing clouds of slime oozing over the top of...

    Help with Dragons blood

Though I've never had a problem starting a fermentation, I've started adding the lemon juice after fermentation has really started rolling, usually day two or three. I think that there's little chance the sodium benzoate stands a chance against an active yeast colony. Dale.

    Spring Wine Plans

Oh my, I like thinking about spring because I really hate cold and snow! I've got 2013 mulberry, peach, aronia berry, elderberry, and cherry to bottle. 45 gallons worth. I just put 20 gallons of dragon blood into carboys, and I've got another 10 gallons of skeeter pee going in primary. I'm out...

Great idea on the electrical tape on the threads! I had the pleasure of my 3 yr old grandson helping me bottle, and he seemed to really enjoy turning the adjusting nut when Grandpa wasn't looking! Dale.
