    As long as fermentation is still active , you have a nice blanket of CO2, and you do your punchdowns, you are OK. At SG of 1, with the alcohol, the reading is off, you likely still have sugar and an active fermentation. Extended maceration is the term for letting the juice stay on the skins...

    barrel decision

    My $.02, I prefer European oak. I have 10 Vadai barrels. In my experience it is subtler in the short term and mellows the way I like it. I'd use more French if I could afford them. Others as noted by sdelli, prefer American. So, Tom is right, you need to try for yourself.

    DIY Orchard/Vineyard Sprayer blower/fan ideas

    Wow, quite a challenge to come up with something for bush/vine and trees! Our orchard sprayer uses a simple engine driven fan to create the mist. Needless to say it would be very inefficient for vine and bushes.

    Can I start my white?

    I like to keep the aromatics in my Riesling so I bottle in December for a September harvest. I've also let it bulk age till spring with good result. So I second a 2-3 month bulk aging for it.
