    First Mulberry

JW, I wish I could help but I have never made a mulberry wine either. Given my love of wines made by steam-juicing, I would definitely steam them.

    Black Currants - Zone 7

Thanks, Cracker Cork for the suggestion. As I make my selections this fall I will see if anyone offers a good enough deal for me to do both.

    Black Currants - Zone 7

Any suggestions on which plants to select for Zone 7? A reliable source of quality plants? How many plants needed to make approximately 5-6 gallons wine each year and allow the critters to have their fair share? Your feedback will be appreciated.

    Fresh Blueberry

The last time I made blueberry wine I steam-juiced then I placed the pulp in a strainer bag and placed it, the juice and pectic enzyme in the primary. After 24 hours, I removed the bag, squeezed it gently and discarded it. I had a bit more sediment to deal with but the wine turned out great...

    Fruit In Freezer

Just finished picking and freezing 23 pounds sweet cherries and 37 pounds of plums. Wild blackberries are next on the agenda. I love to pick those darn things but I dread removal of all the fine thorns that must be picked from my hands afterwards!

    Steaming Strawberry ?'s

By all means have her throw them in a freezer until you return. Then, thaw them, remove the greenery and proceed with steaming. I would not steam them with the greenery attached unless I had no other option.

    Pear Wine

I have made 2 pear wines using the steam-juicer. Both were beautiful but benefited from an F-Pac. Otherwise there was very little flavor. As to the amount of juice, if the pears are a juicy variety, they will produce a large amount of juice. If they are a cooking variety, the quantity of juice...

    Blueberry Wine

Six bucks a gallon is a great deal. I bought mine frozen last year because picking my own was going to cost 3 bucks a pound!

    Blueberry Wine

Blueberry is one of my favorites. Made with steamed juice it is a delight. I had not previously considered oaking a blueberry, but I will certainly give that a go with the next batch.

    Fruit wine question..

Pouring it back and forth degassed it and, thus, removed the dissolved carbon dioxide. Next time, degas before bottling and every bottle will taste like this. Love blueberry!

That makes me feel a bit better! My self-made racks are trash by comparison, however, they get the job done. I have an old friend who enjoys woodworking so I may challenge him to make me some like yours.

Did you build the rack or purchase it?

    Ink Running

I have used Krylon Triple-Thick Crystal Clear Glaze (0500) with success when applied with several light coatings. Besides being a lot of work in preparation they are extremely difficult to remove. I have reverted to simple paper labels. As far as I know, only laser printed labels have the...
