    all of the above are great answers and i would only add that when you are ready, and have some time and money to spare...divide up a batch...2.5 gallons ( your reduced version) and alongside it do a 3 gallon version....your call on taste....afterall, its your money, life and enjoyment

    3 mos from fresh grapes to bottle is pretty fast....how long did you wait to bottle the first dechaunac wine you made...it may be a time thing here and some time for development may be in order...it could also be the amount or rain last yr greatly affecting things

    indeed there is...by my experience i have seen as much as 17% loss on a very vigorous ferment under warm conditions w a dry atmosphere above since you are doing a port you will have a noticeably sweeter one...you may love it...make sure you taste it :) anyways it is all a challenge :)

    regarding, "during long term storage", remember this....the water you mentioned that evaporated, condensed and then went *into* the carboy is only half your equation......the wine itself can also evaporate up into the inner cap and condense and trail down into the water/kmeta/vodka in your air...
