    Which yeast for Malbec?

Why not do both, bottle half each one then mix the two and see what you like better. bk

    Differences

All Midwest has is 1 lbs bulk bags of Sodium Metabisulfite, I wonder why they don't have both? bk

    Chilean Juices at Midwest

Just cruising through Midwest's website and found Monday is the last day to put in a your "pre order" for Chilean Juices and grapes (I think). Anybody live around Arkansas and want to put together a pallet? bk

RJ Spagnols High SG reading on my Port

Wade, I sprung for a Hanna PH meter, so it cost's me whether I use it or not, I have found that when calculating Sulfate the amount is about half the recommended amount when testing PH and using the chart. Now the testing kit for the free SO2 is another story. bk

RJ Spagnols High SG reading on my Port

And the winner is... Wade. With the 375 ml of Grappa it has finished out at 1.030, with a PH 0f 3.75. I think I "fortify" it a little more, it should be a knockout, literally. bk

RJ Spagnols High SG reading on my Port

After much care and feeding of my wife's White Chocolate Port I was getting ready to bottle when I took an SG reading, to say the least I was taken aback! Finding nothing in the instructions regarding the final SG reading, what do you think it should be? And to top it off, literally, I added 375...

    Bottling

A couple of questions: #1. After sanitizing bottles with K-meta, how many hours can I wait before bottling, can I wait till the next day? #2. Adding Sulfate is a very exact science, why is Potassium Sorbate not? #3. Sanitizing solution, 3 Tbs. K-meta per gallon of H20, how much...

    RJ Spagnols Grappa

In the final stages of the White Chocolate Port and In reading about Port I notice some people "fortify" it with alcohol, Grape alcohol is recommended. I was thinking about some white lightning but trying to be a purest thought I would use something made from grapes. Is Grappa OK? How much would...

    Bulk aging questions

Why are "we" so worried about adding Camden if we're bulk ageing, if the wine was bottled it probably will be exposed to more O2 than bulk? bk

    New PH meter and Sulfate

I wish I could post the table from the HWD but I think I might be infringing on some touchy copyright laws. It shows target levels in PPM you need at your PH level, then in another Table how many grams to get that target level. The authors theory is, after you test for free SO2 you can add more...

    New PH meter and Sulfate

If PH is not the correct way to determine quantity of SO2 to add where can I find the charts for SO2 addition based on TA? bk

    New PH meter and Sulfate

Well all I can say is "Appendix D" in the HWD thinks you can base your SO2 on PH. bk

    New PH meter and Sulfate

Testing the wine with the PH tester and following the chart in HWD(Home Winemaking for Dummies) I am getting some different amounts of Sulfate than what the kit suggest to add. Example; Australian Shiraz/Viognier has a of PH 3.60 HWD suggests 30 to 50 PPM which at 50 PPM that only equals 1.60...

    Camden tablet conversion

Being snowed in, 14" and counting, I figured I might as well do something so I calibrated my new PH meter and tested one batch of wine. It read 3.63 PH, which calls for about .26 grams per gallon (according to Wine Making For Dummies, how appropriate), if a tablet is .50 grams this will be...
