WineXpert On second Racking - Needs a bunch of liquid

If you let the sediment settle awhile, you will be able to get more wine out of it. If you have already thrown it out, you will have to either top up with similar wine ASAP , or get the marbles. Unless your going to bottle right away, it doesn't hurt to get some lees transfered along with your...

    Wine on a tight budget

I made a gallon of Cranberry wine from canned whole Cranberry this year. Starting SG was 1.080, the finished wine is wonderful at 9 months. My Banana that started at 1.100 is still way too hot at 9 months. I believe the lower alcohol level makes for a better balance of flavor. Dave

    WineXpert First Batch Taste

Yes, post fermentation, alcohol is usually the dominate character. It will improve with age. Try it again after 4-5 months aging, you will be able to tell the difference. The VR kits can be ready to be bottled after 6 weeks, butthere definetly not ready to drink. Fruit tastes will come out after...

    WineXpert What do you suggest?

I made the Island Mist Reisling, got a lot better after 4-5 months. What type red do you like, Dry, Semi Sweet, Oaked, Tannic, Spicy? You could read the manufacturers descriptions on their websites. I made the leap to the high end kits, they need more aging though. I made a couple of VR Mezza...

    WineXpert Successive rackings to carboys

I always take as much liquid as possible, even if it means some lees go with it. I never bottle my wines for at least 4 months, longer for top end kits. If you want to bottle your wine in 28 days from starting, always leave as much lees behind as possible, you will lose4 to8 bottles of wine...

    WineXpert Fixing a "thin" batch?

I wouldn't judge your wine until it ages at least 4 months. I have not liked most of my wines right after finishing fermentation. It is amazing what a few more months will do. Let it age in the carboy awhile, you can always blend later if you do not like it then. Dave

    Cayuga

My Peach wasn't drinkable for about a year, now it is wonderfull. It was exactly as you describe right after fermentation completed.

    WineXpert mezza luna red

I'm not very good at describing wines,I like what I like, andIlikeMezza Luna. It is medium bodied with cherry and raspberry flavors, somewhat tannic with a hint of oak. I have my second kit of this bulk aging now. I may oak this one a little more. Dave
