    Joe, This was my first time to tweek a kit so I only added the Rasins. Probably should have captalized as well. ABV is around 12% as the starting SG was 1.086, current PH tested from the Carboy is, around 3.2 - 3.4. Kit is a Winexperts Vinters Reserve made to 6gal. Clark

    Tannins - Know when and why to add them.

    A little different question, would someone confirm or correct my assumption that finishing Tannins should be added prior to filtering. Seems like they need 3-6 weeks aging, then filter, then bottle?

    Joe, Very cool, is this for 5 or 6 gal? No problem with fermentation temp. I have a fermentation room with temp control, very convenient. So it's raisins and oak OR tannin. Will give it a go.

    Jo, nope, it is a 6 gal. Sangiovese kit, that is why I was curious if I could improve the final product by reducing the yield to 5 gal. and incorporating some of your amendments. If so, what would you recommend, it comes with Oak (dust). Any advise would be greatly appreciated.

    Would the 5 gal. with tweets protocol work with a WE Vinters Reserve kit. It is a 2.6 gal. kit vs the 1.6 "cheep" kits that are often referred to in this thread.

    This is a SG correction thermometer. One scale is temp. The second is the number you add to your hydrometer reading to compensate for hydrometer calibration vs your actual must temp. Problem is unless your hydrometer is calibration to the same 0 as the thermometer it's wrong. Note the 0...
