    Carboy carrier

You could easily make some corner inserts out of scrap plywood, etc, and screw them into old milk crates. Menards sells new crates that are a bit flimsier than the milk crates, but adding plywood to the bottom helps.

    Wild Grapes

Cabernet & Moscato are not considered Wild Grapes. I believe that you should make the kits as they come. Make some other wines - Concord, real Wild grapes, Elderberry, Cranberry, etc; and then taste you Kit wines. At that time make a judgement if you need to blend wome of the other wines with...

RE: The loss of Jack Keller

Yes, that is where I found his web pages. Is that a "forever" site? - although nothing is forever. When I do a search, it doesn't come up.

RE: The loss of Jack Keller

I really don't know. Does his estate, and ultimately his heirs, own the web pages? Many of his pages are recently hard to find; and they're archived. The latest site is winemaking: winemaking recipes When I search for Jack Keller, that site does not appear. Would a site like Wine Making...

    Walnut Leaf Wine

That is called Nocino. I have a batch going right now. I use Vodka, cheap red wine, sugar, cloves, cinnamon, nutmeg & some coffee beans. I've read that the Walnut leaf wine is best when you use the new leaves in early spring! That is when I'll be trying it.

RE: The loss of Jack Keller

@TxBrew IMO, Jack Keller's web pages are at least an important history and information trove for our hobby. Is there anyway that we can help to permanently archive this information?

    Jack Keller's orbiturary

What a fine gentleman. A great loss to our hobby.

    Concentrates vs whole berry

If You really want to know, try them both and use the same yeast. If there is a difference that is important to you, then you will know what to try the next time.

    Walnut Leaf Wine

I've made Nocino and its rather nice. What about Walnut Leaf?? Forty year ago, I got a book - "Flower , Leaf & Sap Wines'' and I've made Birh Sap wine & many flower wines, but never a leaf wine! Has anyone made Walnut leaf Wine? Jack Keller has a recipe for it, but I was wondering if it...

    Water wine

Yes, but after reading Keller's notes about the amounts of fruit and his suggestion of doing second runs of wine; I was thinking that having something to add that was neutral but with alcohol might be useful. Whether for just topping up a carboy or diluting a wine, this would be an option...

    Water wine

Other than taste & body, are there any reasons why you couldn't or shouldn't make an alcoholic beverage out of just water, sugar, nutrient, acid blend and yeast? Calling it wine is certainly a little presumptuous.

    Keller Recipes

On searching Keller's site, I ran across this statement. It explains some of his philosophy of fruit amounts. With few exceptions, the more fruit you use in making a wine, the fruitier tasting it will be. This can be good or it can be too much. If good, so much the better. If too much, you...

And, if you click "More Recipes", near the bottom of the page, it will take you to the next page, and then do that on the nest page, etc. Also, at the bottom of the page, the yellow boxes are destinations that all seem to work.

    Problem with corking

I have been using T Corks for 15 years and used screw tops for about 10-12 years. I have had NO problems - no leakage and no spoilage. The screw tops would be the easiest for you to open.

    Amount of Fruit for Recipes

I'm sorry that I led you to think that I was not satisfied with the Cranberry sauce wine. It is quite good and I could care less about the lack of color. I've been making Cranberry wine since the mid 70's, and used real berries, wine concentrate, canned sauce & canned berries. They have all...

    Amount of Fruit for Recipes

The juices are generally sans the skins, that is where most of the color is. This is a wine made from Cranberry sauce, 5 pounds of sauce per gallon. A pretty color in the carboy, but quite dull in a glass.

    Sour cherry wine

IMWO It seems a bit heavy on the fruit, but your alcohol level night counter that. Keep us posted as it ages.

    Amount of Fruit for Recipes

Well, I certainly would love to try that!! Ijust can't imagine what it would be like. Please keep us posted on the results. It is my opinion that the earlier fruit wine authors were not trying to make a real fruity / syrupy wine. I believe that they were trying to replicate grape wines with...
