    Welcome to the group.. I too would say get smaller (5 gallon) carboy or top it up with your favorite riesling. this will help prevent oxidation of your new wine.

    I have had this with my bottles with no issues.. Just make sure you stand you bottles up for a day or two after you fill your bottles. This will let the cork swell up some. I do use number 9 corks though.

    I agree with Noontime, Cleaning your bottles as you use them saves time.. That is what I do so I only have to sanitize before filling..

    I agree, No Bleach.. You are better off using a food grade sanitizer for your equipment, and most of them are no rinse products..

    It depends on the kit you make. Some are better consumed young such as mist kits, and ones such as Big Reds are better off aged for awhile.

    If your hydrometer reading have been steady after the last three checks I would go ahead and follow Julies' instructions. I would make sure you give it sufficiant time to clear after stabilizing. If you are going to filter you should let it clear first..

    Has it been Stabilized yet? If not all of these steps can be done at the same time. Then allow 2 to 4 weeks to clear before bottling.

    Steve is right spend a little more time degassing your wine. If you do not have one purchase a drill mounted degassing tool and degass for 5 minutes and wait a few minutes a degass for a little bit more.
