Sulfite additions for barrel aged wine

Now that I have 3 11 g vadai barrels all my kits are going thru them now. I usually make per kit instructions, leaving out sorbate and then into the barrel usually 1 month after clearing. Since the barrels are newer usually in for about 2 month then removed and racked into 2 6 g carboys with...

Large Batches from Multiple Wine Kits

I'm assuming you mean like combining the same of one kit into like a brute and fermenting together. If so I would assume you would just add a packet of yeast for each 6 gallon kit and should ferment fine. It's something I am also thinking of doing.

    Varietal labeling

Q for the pros out there. I have been researching out some small boutique wineries and I am pretty sure a few are making there wines that they sell from juice and also kits, the high end ones. Most of there labels are with the varietal and I know a few they change slightly. If you are say...

Other US Winery Supply kits Anyone use these

Have made quite a few of them the first ones been bottled since this feb. although they are pure varietal I think they still lack body requiring a grape pack which bumps your cost up. Actually ended up blending a merlot and zin into a 11 gallon barrel since I thought they tasted similar at...

    Chilean juice for barrel question

Thanks for replys. I think what I am end up doing just to be safe is use one of the 11 gallon barrels for juice buckets and get some Cali juice in the fall to replace the Chilean juice. I know from what I have read using sulfite testing methods aside from the electronic meter, ie. the little...

    Chilean juice for barrel question

I have made kits up till this spring when I have Just finished fermenting 6 buckets. I have purchased a few barrels from vadai a 6 gallon and two 11 gallons which have worked wonders on my kits. I was initially planning on putting 11 gallons of a Chilean wine into a new barrel. My concern now...

RJ Spagnols Cru Select New Zealand Sauvignon Blanc

Been bottled about a month now. In carboy had great fruity taste which dissipated in a bottle tried few days ago. Hoping just needs more time in bottle. Didn't do any tweaks, I can't rememeber the yeast that it came with But you can consider switching up to lavlin 1116.

    Expanding Production from 6 Gallons

I know laws are laws and I have no intention of breaking them, but any one hear or know of someone ever busted by the Feds. I mean do they have a dedicated team searching for home brewers making to many wine kits. Just seems like waste of government resources especially since it can be hard to...

Bottling with All in One Wine pump

Tested the limit today. Have to say bottling was a breeze for 8 6 gallon batches in row till to pump turned it self off. It turned back on after about 30 min cool down, but we were just about finished by then anyway. Looking forward to future bottling with the all in one.

    Other grape pack recommendations

So quick follow up I am in the process of running a few US elite smaller scale concentration kits. None are ready for bottling yet but first impressions have been positive. They are no longer carrying their crushed grape packs and I was interested in adding some grape packs to future red kits...
