Should i freeze the apples before juicing? I normally freeze all my fruits as it yields more juice. Also what yeast do you all recommend?

Yes it was bubbling good this morning. Ph was around 3.8- 3.9

Beginning wine maker here. Started my first peach wine a few days ago and pitched yeast last night. I tested ph but i didnt realize you had to adjust ph prior to pitching yeast. Can i add acid blend later after fermentation???
