Just fooling around with grape juice from the store, while waiting for my kit Wineexpert merlot, to complete settling down and aging, I'm just impatient but thanks for the input, you guys are great for us beginners.
line 3.7 on the instructions say topping off the carboy during clearing process is not required, so I guess you have to top off when aging, would that be correct?

On day 14 it taste a little dry, and SG 0.999 is that OK, and it is fairly clear,as clear as merlot gets,Is it OK?

I read on this site that you should stir during fermentation, my instructions didn't say anything about this in my wine kit which is a merlot reserve, I thought you shouldn't open the bucket while it's fermenting because you would introduce oxygen , now what??
