Harvested the Marquette yesterday, Chuckd and his wife came down to help as well as some friends. Took only 2.5 hours to harvest 900 pounds. I was surprised the harvest was so big as I’ve removed a few vines in the last couple years.The top of the slope had a ph of 3.19 vs the bottom with ph 3.33. Marquette grapes don’t have a lot of flavor but this years have the most since I’ve been growing them. I’m using Bio Diva yeast to try and get more flavor.All in all a good harvest with no stink bugs in the grapes and no wasps or fruit flys to bother us. I added mauravin b to the Brute with the low ph and it’s up to 3.3 now. The fermentation is going great now. This is the first year I’m not using potassium bicarbonate to adjust the acid. After MLF the wine should be around 3.6.

I have not seen Mauravin yeasts before. I see you selected a malic acid eating yeast. Happy fermenting!
