What is a good yeast for acidic wine, used EC-118 in some hard lemonade, its been 3 days and hasn't started yet? Thanks
 
You should probably make a yeast starter and add to your wine once it’s rolling. Acidic wine can be tough to get started.
 
Yeast can be unhappy when the pH is in under 3.0. What is your pH? I've done a number of acidic wines (lemon, cranberry, ...) and always adjust the acidity down, while watching the rise in pH. I like the pH between 3.1 and 3.5 for the fruit wines and the yeast never has a problem
