Hi All,
Just racked my first Zin kit added alittle strawberries and peaches. Im looking to start my first fruit wine (cranberry and orange). Is there anything I should be be aware of and any ingredients I would need? Thanks in advance for any suggestions or recipes or direction to go, Mark
 
I have never made either cranberry or orange, but I believe I have read on here that both of them are kinda hard to get started fermenting. Make sure you make up a good starter for the yeast and they should take off ok. Make sure you get some yeast nutrient and maybe a shot of yeast energizer before you start. I would put part of the nutrient in now and give it the rest when the s.g. gets down around 1.040. Arne.
 
Welcome to the forum.

For fruit wines (any wines!), you should always go by an established, proven recipe, at least until you become experienced. Several people on here can provide you with these recipes, if you wait around for them to respond.
 
Be sure to check your PH and adjust it if necessary--I'll bet both of these need acid adjustment with calcium carbonate. Reduce the water you use for an intense flavor.
 
Thanks guys for the comments and advice. I started a white grape, raspberry, and orange from frozen concentrate. They were all 100% juice, just decided to try it on a 1 gallon recipe.

ingredients:

3 frozen concentrates
1/2 tsp petic enzyes
1/2 tsp acid blend
1/2 tsp yeast nutrient
1 campden tablet

let it sit overnight then added Redstar yeast at 75*

SG started at 1.080, looks good so far, fermenting nicely!
 
Bout the only thing I see wrong is the 1 gal. I did a few of those when starting out and the biggest problem with them was there was never enough of it. Tastes great, but nuthin left to drink. LOL, Arne.
