Hi Guys

my wine kits are finished the 2nd fermentation stage and i am about to transfer to 5 gallon glass carboys.

my question is ,

do i need to top up the wine in the carboy with water or use a bottle of similar wine. ?

it says on the instructions its not recommended to top up, but if i dont and their is too much space for air, will it kill my wines ?

Definitely top off, I always use a similar wine, but if you think your must was on the strong side [flavor] you can use water if you must. Too much air space in the carboy will cause problems. Roy
 
Also, it should be in a 6 gallon carboy. They might tell you not to top up now because of additives and degassing that you will be doing soon. Read the directions again to be sure.

in the UK it is 5 gallon kits and 5 gallon carboys

i am starting the degassing today

OK, but you had no location info for me to go on.

As was mentioned, maybe the instructions wants you to transfer, then degas, then top off. I don't really know, since you didn't say what variety or what kit.

You don't want the wine topped off while you are degassing, it can result in a wine volcano and spill all over the place. A real mess!!!

Once the wine has had clarifiers added and is in the process of clearing, it must be topped off from that point onward.
