Hello All: I am new to the wine making hobby and I plan on making wine from a vintners kit. Vintners claims the process only takes 28 days to make wine. Being I plan on bottling during the spring, can the wine sit in a carboy for a longer period, oh approximately 3 months or do I have to bottle as per the directions?

Yes leaving it in the carboy for an extended period of time is ok. In fact, I would say it’s the preferred method for most on this forum. The biggest thing to know is, make sure your wine is protected with the proper level of sulfites.
 
Add 1/8 tsp K-Meta ~every 4 months that you bulk age if you don't have any testing equipment.
