I got a text from a vineyard in San Diego on Friday that some Syrah was ready to harvest the bext day. Went out yesterday and picked 320lbs. $.50/ lbs which is a great price! Couldn't rent a destemmer/Crusher so used the milk crate method to destem and crush. Fruti is awesome!

Brix 25.4 after crushing
pH. 3.45

Now doing a cold.soak for a few days with Lallzyme ex.

Beautiful fruit! Super price. You should get some fine wine from that. Great numbers on the analysis. Do you plan any alterations to the wine as you could end up with an ABV of >>15%?

I will be adding tannins and aging on 5 year opened season American Oak. Hoping for a nice rich tannic wine. I am using Clos wine yeast which is good up to 17%.
