I've been making apple wine with straight golden del apples, it's very good. Last year make apple with red del apples, and also Arkansas black apples.

All 3 are wonderful tasting wines, each distinct in its own way.

Vivisted my brother last week and decided to "blend" all 3 in equal parts. I was amazed at the difference. Now I still have to make my wife's golden del wine but now I have to make this blend (she hates it).

Moral of the story: never be afraid to try something new.
 
The recent issue of Winemaker Mag says that Apple wine made from several varieties is much better than using just one, guess you found this out for yourself.
 
I have 5 gallons fermenting with 3 different apples, one of which was crab apple. Looking forward to it!
