Apple wine kit...have you ever seen this?

When I went to rack this apple wine kit for the first time, this is what it looked like at the bottom. It looked like a big thick sponge. 4D6A34ED-B952-43B8-BF79-95512D4ACA90.jpegI have never seen this with any other kit before. Has anyone else seen this??
 
I've had that much lees, with a similar appearance, like gas bubbles broke from the compact layer. Not from a kit, though, but what you have wouldn't bother me. Is that with bentonite?

Yes, I did use bentonite
 
apple cider is capable of doing something called “keeving” which is a complex caused by adding 500 ppm Ca++. It looks like a keev that sunk, ,,, a guess is that a calcium bentonite was added which caused the complex to form and also sink.

Thank you. I did use bentonite..... once I racked it it started fermenting like crazy again! We shall see, LOL
