You will get the best flavour if you use “cider”apple juice (tart apples) and sweet (eating) apple juice .
Or of course a mix of juices designed for fermenting into hard cider.

Apple wine is nice. So is apple wine mead
 
I currently have about 12 gallons going in different stages of the process. It seemed like with my first batch (which was my first time ever making wine) we screwed up so many things - had to use old bread yeast as yeast nutrient, no campden tablets, no stabilizer - but it turned out really well and everyone I shared it with loved it! It was only about a 1 gallon batch which yielded 5 bottles which were all consumed within 4 days!
