I had a 3 Gallon carboy and I broke the wine down into three 1 gallon jugs so that I could back sweeten to a variety of sweetnesses. The third jug came up quite a bit short . Maybe a third of the jug is air. I have an airlock in it and only plan to let it age in the jug for maybe a week to make sure it doesn't pop the cork. Then I will bottle it. Will it be ok like that? Should I add something to fill in the space? Could I put it in the fridge?

since you plan on bottling soon should be okay. putting in frig should also help. did you add sorbate and k-meta?

I agree with sal, but another option could be to leave it only for 24 hours and then bottle (instead of a week). I much prefer risking a popped cork then risking oxidation!
