I've got a Winexpert VR Bergamais and would like to change the yeast. I was thinking of a Lalvin RC-212 or a 71B-1122. What do ya'll think?
 
Be sure you split out your yeast nutrient bec both of those are fussy about going hungry.

What came with the kit? EC-1118?
 
If this is supposed to be in the style of Beaujolais Nouveau, it should be a pretty fruity wine that is low in tannins and dominated by simple esters. It should also be an early drinking wine. 71B-1122 is a more appropriate choice between the two.
 
EC-1118 came with the kit, and i was going for a Beaujolais N style so I will go with a 71B-1122.
