bottle early question

I have 26 gallons of Brianna wine (white) that has been aging for 4 months, not ready to bottle, however i would like to bottle 2 or 3 for christmas. It is very tart, back sweetning greatly helps it. What would you do? no sorbate has been added at this point, if I make a slurry of sugar will it cloud the wine. If so will it clear in a week ??? what are your thoughts????
 
I would BUY 2 or 3 bottles and give those whilst keeping the wine and finsih bulk aging it and then give it next year.... just my .02 for what its worth
 
If youn have the means of splitting it into a 5 and a 1 and back sweeten the one then go for it. There is a chance of the simple syrup clouding it up but not typical. Sometimes no matter how well you mix it in some sugar can settle out so get er done now and the little bit of sugar should settle out in a week - 1 1/2 weeks.
 
Wade- would it help to add sparkloid and do I need to sorbate, if drank in 2 weeks
 
I would not add it. A 4 month old white is gonna be very green
 
sounds like this wine is not ready to drink,adding sparkloid,to clear a wine that you want to drink in a week or 2No, sorbate yes if you have to sweeten to taste.So you dont start to re-ferment.If you want to serve this wine the only thing i would say is sweeten it just before you serve it.If you must.
 
I'm with Nikki on this one. Leave and drink it next year. If it is not ready then you don't want to have your guests think you do not make a good wine when they taste a green wine.

Yeah i agree with that - sometimes first impressions last a long time.
