Day 21...Crystal clear, no bubbles at all, SG .995...tastes like wine, chardonnay-esque...Should I rack to secondary with potassium sorbate and campden tabs and bottle or wait another week?

Are you saying it's still in primary after 21 days? If so, definitely rack to secondary. But I wouldn't be planning to bottle for a while yet.

BTW, what are you making?

After 7 days I racked to a secondary. I plan on racking to another secondary with the potassium sorbate/campden tabs off the lees and bottling from there.

This is what I made -

1 liter Winexpert White grape concentrate
2.25 Lbs sugar
4 tsp acid blend
2 tsp pectic enzyme
2 tsp yeast nutrient
H2O to 2.5 Gallons

Lalvin EC-1118

Was already told using the Winexpert grape concentrate was a no-no, but I wasn't going to toss it.

Sample this morning tasted like a Chardonnay-esque white.

Don't believe everything that you read. Make up your own mind based on the results.

Any time you have to ask if you should bottle or wait... you should wait!

My opinion, rack off any lees and add at least the campden tablets.

I'd age at least 90 days then taste again. At that point you will have a better idea about the taste. If you want it sweeter then add another dose of campden and the sorbate and sweeten with simple syrup. If you like it as it is (assuming it's dry) at 90 days then add just the campden and you could bottle. Or you could age a bit longer, remember once it's in the bottle you can't tweak it.

I am assuming you degassed if not then you also need to be sure it is degassed before bottling.

Thanks. Based on how things are going with this wine, I'm sure I'll use it again. Winexpert didn't mark the box "do not use for wine making".

I'm going to let the wine sit for at least another week or two. I'm in no hurry. Was just wondering if I should bottle or not. I got the answers I needed.

In the meantime, I think I'll make some more ale.

From what I can tell after reading some of the post on here there isn't anything you can't make wine out of, that's what make it interesting. Good luck and maybe you found something no one else knows about.
