Broken leg, now what

Monday, I started getting a new 23l barrel ready for use. I had been sitting with water in it for 1 day when I broke my leg (on Tuesday). Wine making will be a challenge for the next few weeks being on crutches and all. As a precaution I added a 1/2 tsp of sulfite to make sure I did get any nasties, now I'm waiting flavor :(. How long can this barrel sit with just water in it?

As long as you have properly suflited water you shouldn't need to worry about any nasties developing. I think your main concern is how much of the oak are you losing to the water that should go into the wine. Perhaps others with more experience can provide more insight.
 
Why not get rid of the water and add sulphur sticks instead so you don't lose oak?
 
What about draining the water and let it dry out until you can either get some help or off the crutches? Then rehydrate per directions. Don't give up the oak to water for 2-3 weeks for sure. Either get wine in it somehow or drain it somehow.

I would think a small amount of k-meta solution would be enough to keep nasties at bay. It is the fumes after all that do the work.
 
Does oak give up the good stuff to water? I was under the impression that alcohol was needed to bring the flavors out of the wood.

It does leach into the water. Thats one of by big concerns. Th good news is, I can probablt deak with this tomorrow so I should be ok. Looks like my 19 year old duaghter is going into the winemaking business :)
 
Drain the barrel and re-hydrate when you are able. I do this all the time.
