I making a Vinifera noble kit and have added the clarifying agents siligel/liquigel. The instructions say to add these only 8-10 days before bottling. After reading the great info on this forum, I have decided to do some bulk ageing of that wine. My question: Is it ok to bulk age after adding these clarifying agents ?
 
Most will have their wines cleared before aging. The idea is to get all the lees out of your wine so you do not get any off flavors. Depending on how long you age you may consider adding 1/4 tsp K-Meta every 3 months.
I had a Amarone aging for over a year in a carboy before bottling.


The kit just wants to make sure the clearing agents have time to work before you bottle.
 
Thanks. The instructions say to keep at a temp. of 59 - 65 during clarifying.
Can I move to a cooler area 50 - 60 for aging?
 
Sure, but how long do you expect to age?





I would not go much below 60 for aging just my 2¢ worth.
 
Yes it is OK to clear them before aging, but if they are mostly clear you could age them after racking to a clean carboy. That way some of the fines will still be in it and age along with the wine giving it more flavor and complexity.I aged aVN Franc/Sauvignon with the fine lees left in it and the body of it turned out great. It tastes like a kit twice it's price.


The cooler temps will slow down the aging process so don't go too cool if you are doing it to age them some before bottling.
 
If only aging 6 weeks I would keep it room temp.

The lowest STABLE temperature you can get, close to 55 degrees F.


It would be better to keep it where it remains 60 degrees all the time than somewhere that goes down to 55F, but moves back up to 70 12 hours later.
