Can I rack again?

Have a RJS cellar classic Winery Series Cab on day 36. Has been in the primary, secondary and racked from the secondary a week ago into another carboy, sulphite, potassium sorbate...degassed...kieselsol and chitosan added and degassed. Seeing sediment at the bottom and directions call for racking again to the primary at day 42 to bottle. Can I rack early to another carboy...say today...and then rack again at day 42 before bottling? Also, degassed with the drill mounted paddle and over did it a bit I am sure. Can I degass again when I rack to another carboy? Hope that made sense...trying to add a racking and degass to the instructions. Thanks...
 
Yes you can add another racking. But I would not be in a rush to bottle this kit, as the skins kits have a nasty tendency to continue to drop sediment beyond the base time frame. Rack again about day 50-60, and then rack/bottle in another 60 days. Then bottle age another 8 months.

Wade has been making the Winery Series kits, hopefully he will chime in with his schedule.

BTW. if you overdid the drill mounted paddle thing, why do you want to degas again?

Only because this is my first wine kit and I don't want to screw it up...

I'm working on an Ehrenfelser currently...degassing now and am excited about the final product in a year for both of these kits. Thinking about starting an Amarone this week.

I don't think it can hurt to degass agan. Some of the kits recommend degassing several times over 2-3 days. Rack first (so you don't stir up the sediment that has settled), then degass again if you have doubts. Some people use a vacumm pump in addition to whipping. Whatever works for you.

As noted above, force yourself to be patient. Wait extra week(s), not days, until you are sure your wine is nice and clear, before you bottle. If you have the luxury of extra carboys most would recommend bulk aging in the carboy for a few months before bottling.

It would not be a problem to bulk age in a carboy if that is what is recommended. For some reason I was under the impression that it was 6 of one half dozen of another whether or not to bottle or bulk age. Would love some more input. I have gone through several of the threads on the two. Thanks...
