I am enlisting the knowledge of all here who have made port wines from scratch. I have not been able to find many recipes that might fit the bill. Any input is appreciated.
 
What abv are you going to be looking for and what is the approx ofthe juice you have now?

Having pondered your question for some time now gaudet I just don't believe that you could make a good Port from Muscadines. A Port needs a good base that will handle the high abv of a Port and i just don't believe Muscadines will do that. My best ever, in my opinion was a Black Currant based.

I probably have about 3-4 gallons worth of juice that could be obtained from my remaining muscadines. I could shoot for 16% maybe a little higher.

By base, are you talking about the base flavor? Not sure I understand. Please expound on it.

Maybe I could make something high ABV and sweet dessert like. Almost like the orange blossom muscat kit.
 
For me, base=main juice used for my Port in which case it was Black Currant with Elderberry, Rasberry and Blackberry added for complexity. I could be wrong but I just don't believe Muscadine would be able to hold up to that high an alcohol content and still taste like Muscadine
 
Now I understand what you meant. I'll have to consider if I want to make it, or hold off until I get more muscadine grapes of a different variety to combine them
 
Try a little experiment gaudet. Get you a half pint of Everclearclearand fortify a gallon of the carlos you have made up and see how it handles the extra alcohol. I would add only about 1/4 the bottle of Everclear initially though
 
So you are saying to add 2 oz of everclear initially to see how it hold its flavor in the presence of higher ABV. I can try that.
 
They have the port priced @ $20. Not to bad and if we ever get over there I'll pick up a bottle or two. The winery close to has a strawberry port in a blue triangular bottle, but I don't like the port. Neither would fit very well on my wine rack but the San Sebastian ones do look very nice.

Our friend went to Florida recently and brought us back a bottle of port from San Sebastian and it was very good. He also brought us a cream sherry as well which I haven't tried. It looks like a nice winery to visit if you are close.
 
Congratulations Waldo. That port looks fantastic with a medal.

jeepbabe we still haven't made it over there but have made up for by making more visits to wineries located closer to us
