Anybody have any experience wine making with these cherries? Since my orchard and vineyard flopped this year due to the early spring weather I have been looking for local sources of fruit for my winter wine projects.

I have procured myself 60lbs of these cherries and am looking for some do's and dont's.

Bumping this thread as I picked up the cherries today. Opinions on whether or not to make two separate wines or ferment one big batch?

If they have two distinct flavors, I think I would ferment them seperately. If they are about the same, would probably do them together. If seperate, you can blend them after the ferment. Arne.
 
Bumping this thread as the time for starting this wine is near.

I got the cherries already frozen but not pitted.

Ideas about pitting these cherries at this stage are welcome as I know it's not recommended fermenting these with the stones.

Also, I do not have a steamer.
