does anyone know what kind of enzyme comes with this kit? I find it frustrating to get a package that says enzyme, but doesn't say what it is.

I don't know exactly what it is, but it is for dealing with a white protein ring that sometimes develops along the top of the carboy. I've only had the ring on about half of my CC wines. If I don't see the ring, I don't use the enzyme.

No, its an Enzyme blend consisting of lipase and pectinase.
