Jobe: I tried sweeting with grape juice, and did not like it. I ended up trying 1/2 gal. I then tried a 1/2 gal with plain dissolved sugar. I didn't like it either. What the heck, I tried some natural honey dissolved in a little water, and I liked it, so the bulk of my cherry got the honey treatment. I left it just a little tart, do you think that will change over time???
 
I just racked my sour cherry and the color is amazing! I just used table sugar ands it's guud! =)
 
Kutya: The couple of wines that I have that were sweetened back at the end, and is now about a year old, seems sweeter today than at bottling. Could be just perseption, but it seemed sweeter........... or maybe smoother. I'll have to try the honey trick and see if that would suit my taste. We should probably ask Masta what the hazards (if any) would be to adding aw honey to back sweeten. He is the honey expert here, Masta?
 
Last night I noticed a pretty thick sediment on the bottom of my 3 gal carboy? I don't know if its's honey that did not get mixed in or if it's something else. I really stired the honey in? Should I rack again or just stir it more???? Any suggestions.


Joan: Glad you liked the sugar. I thought it was just a little flat???I bottled 2 bottles verydry (nosweetener) I'll see how it turns out?
 
Kutya, I suppose it is a bit flat right now but it's only about a month old. I think 10 or 11 months of aging may help! =)
 
kUTYA: Mine was/is flat, even the stuff I have had botled for a while that I sweetened with sugar. My thought last night when I posted for Masta's advice, was that the honey will be heavier and settle, I wasn't sure thought. I wonder if heating it will help? Again, just guessing.......

I wonder how it would be as a sparkling wine?........ A little carbonation? Dunno........ I should try a glass with just the white grape juice. Compaired to my other batch, the grape juice I thought did wonders, but your right, still not great........ Or maybe Joan is right....... Just bottle it and leave it alone till 2008.
 
I stired the daylights out of it last night, and will check it this evening. I'm hoping to keep stiring it until all the honey gets dissolved. If I can't get it all stired in, I'm going to rack it and bottle it. I'm not doing anything until 2008, I'll just wait it out..... Thanks for all the advice. I'll keep you posted on the honey status....jh
