Chilean Wine Juice 2014

So my local wine guy has the info posted for ordering Chilean Toro Negro Juice. I am planning on doing my first white - will do a Savignon Blanc. I do not have the means of fermenting it under 72 degrees. Will I be ok with this? What would be a good yeast to use. Is it worth using opti white and booster blanc?

k1-v1116 would be my choice. What temps will you be fermenting in? Is 72 the absolute lowest? There are others who can chime in better on the differences between warm and cool ferments.

Yes 72 is the lowest unless I can pick up a deep chest freezer that i can put a thermostat on. Would need one big enough to get 4 carboys in.
