Coming from beer making, I use PBW (OxyClean Free) to clean and StarSan to sanitize.

Are these products alright to use in wine making?

I really like to use StarSan. I keep it in a spray bottle, along side a spray bottle of k-meta.

For things like spoons, hydrometers, thermometers, siphons, hoses; anything that can be sprayed, I use StarSan. For sanitizing carboys or sediment collecting jars; anything that can be sealed up, I use k-meta.

I always use k-meta for sanitizing my bottles when I start to fill them.
 
I use One Step as a sanitizer and I have never had any problems with it.

whats the ratio of water to kmeta?
 
i use water from my sink, which is at 220 degrees if I choose. laser hot water heaters are really nice.
 
160 F is all you need. Temperature shock could be a problem with anything greater than delta of 70 F degrees.
