Anyone ever suffer big-time color loss during a fermentation? This batch of muscadine fermented to .996 in less than 5 days and went from a bold deep purple/red to awierd mauvecolor. I just this morning squeezed out the pulp bag and took it out, so lots of skin contact. The temperature stayed between 72 and 76 the entire fermentation also.It sure does taste good though!
Actually, I have suffered a loss of color with my Rose-Hip wine. It turned out to be a brownish-red (brick color?)... I don't know why it did that, and I don't know what I could have done differently (I had a t-shirt on the carboy)....
