I put all those clean bottles to good use and emptied out a few carboys. Still have a couple more batches to bottle, but those will happen closer to the end of the month. I'll be starting a chocolate port and a peach ice wine in the next couple of weeks so the carboys don't get to lazy (gotta keep 'em working).

Very nice! These all look wonderful, and it is true that carboys don't like sitting empty...

They look awesome and Ive been and am still doing the same. Ive neglected to bottle for some time and have finally gotten off mu but to do so as I was completely out of carboys and no where to put any more if i did buy more. I have 2 kits in primary, 2 scratch wines to start, and 2 more kits to start. Oh, and a Brewers Best HopNog also!
 
Very nice, vcasey, and I am glad to see that you are a hard task master when it comes to carboys. If you leave them idle, they will just get into mischief.

And never, ever feed a Carboy after midnight!

But it's ok to add yeast to a primary after midnight! Especially if you are starting one on Jan 1!

We enjoyed a bit of the left over wine last night. The blackberry was really good but needs some aging time as does the blueberry/blackberry/muscadine blend. The black currant as a major hit, even my "I don't like wine" son enjoyed some. I used NW's recipe and the only changes was to sweeten a bit and add oak (not unexpected for me, I know). I have never had a black currant wine so did not know what to expect, but I'll be making this wine again and I'm going to make a mead with it as well.
